Influence of Minor Oil Components on Sunflower, Rice Bran, Candelilla, and Beeswax Oleogels

Abstract The impact of the solvent composition on wax oleogels is addressed by (1) increasing polar components (PC) in sunflower and canola oil through thermal treatment (2) removing minor from untreated oils column chromatography. Subsequently, are produced at 0.05 10 °C min −1 using 4% or 10% w/w either sunflower, rice bran, candelilla, beeswax. Oleogels firmness, break‐up behavior during amplitude sweeps, gelation dissolution studied penetration tests, rheology, differential scanning calorimetry (DSC), respectively. Moreover, crystal morphology samples, gelled , bright field microscopy. Distinct effects caused presence absence PCs characteristics mentioned above observed, depending type. formation highly ordered structures favored without low cooling rates.
